4. From 1992 to the Present — Two Houses, One Story
In June 1992, Philippe Coudy took over the business of Brasserie Paul. As a Maître Restaurateur, he breathed new life into this “sleeping beauty” and restored its spirit as a bistronomic brasserie: traditional, accessible, generous cuisine that highlights the best of local ingredients. In 2006, a major renovation accompanied this revival.
In September 2012, Mr. and Mrs. Waroquet took over the Hôtel Cardinal and completely renovated it. Mr. Coudy, for the brasserie, and Mr. Louis, for the hotel, then modernized their respective facades, finally giving the complex a more unified look.
In February 2026, the Hôtel Cardinal will turn a new page: the old 10,000-liter fuel oil tank, a holdover from the reconstruction, will be replaced by a biomass heating system.
More than a century after his birth, the story continues: two independent institutions, yet still linked by their walls, their history, and the name of Paul.
